What do you do when it is -20 outside and blustery? Bake cookies!
Snickerdoodles, Terassenkuchen (German Christmas cookies) and Pecan Shortbread
Terassenkuchen (Terraced Cake Cookies)
325 F 10 min
1 1/2c Powdered Sugar
6 Egg yolks
1 Lemon Zest
dash of salt
Cream butter and sugar, then add egg yolks, vanilla and lemon zest. Mix with electric mixer until smooth then add salt and flour mixture little by little. Knead in remaining flour until dough is combined. Refrigerate dough for half an hour. Roll out to 1/4 inch thick and cut into shapes. Bake on a greased cookie sheet until edges just turn brown. Let them cool, then stack with jam in between each layer. Dust top with powdered sugar. Enjoy!
